Red Velvet Cupcakes





Ingredients:


250gm fine flour
1 tsp baking powder
2 tsp cocoa powder *optional
50gm ground walnut *I used hazelnut
240ml buttermilk
1 tsp red color
115gm butter
150gm castor sugar
1 tsp vanilla essence
2 eggs


Additional ingredients:
1 tsp baking powder
1 tsp vinegar




Methods:


Preheat oven at 170'C.
Sift flour, baking powder and cocoa powder. Then add ground walnut. Set aside.
Beat butter, castor sugar and vanilla essence until fluffy. Add egg one at a time.
Add buttermilk and sifted flour gradually.
In the other small bowl, put together additional ingredients. When there is no more bubbles, put it into the batter.
Pour the batter into the paper cup by 3/4 and bake them for about 20 minutes.
When the cupcakes are completely cool, decorate them with cheese frosting.


Cheese frosting:


Beat 250gm cream cheese and 50gm butter until fluffy. Then add 100gm ising sugar.
