Light Cheese Cake

BAHAN-BAHAN:


125g cream cheese
300 ml susu segar
80 g mentega atau marjerin
80 g tepung gandum
80 gram gula halus
3 biji telur saiz A
beberapa titik esen vanila/jus lemon

CARA-CARA:



Masukkan susu segar dalam periuk. Masukkan cream cheese sehingga cair sambil sentiasa dikacau menggunakan hand whisk. Masukkan pula mentega/marjerin,kacau lagi sehingga cair,padamkan api dan ketepikan.


Asingkan putih telur dan kuning telur, pukul putih telur bersama gula halus sehingga menjadi meringue.

Di dalam bekas lain yang lebih besar, pukul kuning telur hingga kembang dan masukkan  adunan cheese tadi, kacau seketika.. Ayakkan tepung sedikit demi sedikit dan pukul lagi, pastikan adunan tidak berketul - kacau menggunakan hand whisk dengan perlahan.


Akhir sekali campurkan meringue ke dalam adunan tadi dan beberapa titik esen vanila, gunakan cara kaup balik supaya adunan rata (boleh juga menggunakan hand whisk tapi gaul dengan perlahan-lahan)



Gris acuan kek dengan marjerin dan alaskan dengan kertas minyak. Masukkan adunan kek di dalam acuan. Pastikan oven sudah dipanaskan sebelum membakar kek.


Bakar pada suhu 160'C selama 45 minit (atau sehingga masak) menggunakan kaedah bain marie (loyang kek diletakkan di atas loyang yang berisi air panas ketika dibakar)

Sponge Cake @ Kek Span


Hello! Hari ni tak berapa nak sihat. Selesema dari semalam. Demam rindu agaknya. Hewhewhew..Tapi dalam pada tak sihat tu sempat lagi dok buat kek bagai. Oh syahdu kan? Ok takmo celoteh panjang lagi..


BAHAN A
120gm tepung gandum*
1 sdt serbuk penaik*
*diayak sekali

BAHAN B
2 biji telur gred A
1 sdt ovalette
100gm gula kastor

BAHAN C
20gm air
20gm minyak jagung
2 sudu kecil pes pandan (boleh letak apa saja perisa)

CARA-CARA
Panaskan oven, 170'C.
Pukul Bahan B hingga kembang.
Masukkan Bahan A berselang seli dengan Bahan C.
Alaskan loyang dengan kertas minyak. (Saya guna loyang 8')
Tuangkan adunan ke dalam loyang dan bakar selama 30 minit. Kalau agak-agak tak sure kek tu dah masak ke belum, cucuk dengan lidi.
Bila kek dah masak, cepat-cepat telangkupkan kek atas redai. Tunggu hingga betul-betul sejuk dan boleh hias ikut kreativiti masing-masing.

Corn Flakes Cookies



Wasting my plenty of time at home by making cookies :) Enjoy.



Recipe by Chef Ismail's Book

INGREDIENTS:
250gm butter
150gm castor sugar
2 tsp vanilla essence
300gm plain flour *sifted*
4 cups Nestle Corn Flakes *coarsely crushed*
Icing sugar *optional*

PREPARATIONS:
Cream butter and sugar until well mixed. Add essence and beat well.
Fold in flour and Nestle Corn Flakes; mix till it becomes dough.
Then spoon 1 tsp of dough and place on lightly greased baking tin; allowing room for spreading.
Bake in preheated 180'C oven for 15-20 minutes or until light brown. Remove from oven; let it cool.
If desired, sprinkle icing sugar over cookies.

Frittata

A very simple Frittata


You'll need:

INGREDIENT A:
4-5 eggs

INGREDIENT B:
3 stalks of beans
1 large onion *diced*
1/2 chopped carrot 
1/2 chopped cabbage
Garlic
Red chilies
A pinch of salt and pepper

METHOD:
Saute ingredients B till wilted and add seasoning. Set aside.
Then pour Ingredients B with Ingredients A.
Fry as you make the omelet.*Or bake the dish in the oven*

*You may add cheese if you like, or spinach or potatoes.  You better use non-stick pan for the best result*

Pavlova



INGREDIENTS:
120gm egg white
200gm castor sugar
1/2 teaspoon vanilla essence
1/2 teaspoon vinegar OR 1/2 teaspoon cream of tartar OR 1/2 teaspoon lemon juice
1/2 tablespoon cornstarch

METHODS:
Preheat oven at 150'C.
Beat egg whites until soft-peak.
Add sugar, vinegar (or cream of tartar or lemon juice) and sifted cornstarch. Beat until stiff and glossy.
Cover baking tray with baking paper.
Pile meringue onto paper and shape into a circle.
Reduce oven to 130'C and bake for 1 1/2 hours or till crisp *golden brown color*
Turn oven off and leave pavlova to cool completely in the oven.

TOPPING:
250ml Whipping Cream *use non-dairy whipped cream or fresh cream*
1 1/2 tablespoon icing sugar
*I used ready made whipping cream*
Strawberries, grapes, kiwi *or any other fruit you'd prefer*

METHOD:
Beat the whipping cream in a bowl until thick.
Then you can decorate on the pavlova.

0.17g salt

Kuey Teow Kung Fu


Not bad when you cook by your own and it is delicious and "hmmm.. it's so good" *makan sambil tutup mata merasakan betapa hebat air tangan sendiri. wakakaka*


The recipe is from Mat Gebu *just love that blog. Seriously. 

INGREDIENTS A
500gm kuey teow
5 eggs

INGREDIENTS B
100gm prawn
150gm sliced chicken
Cabbage
Baby corn
Carrot
*you may add any kinds of vegetables you that like*
3 cloves of garlic *chopped
2 tbs oil
2 tbs corn starch
1/2 cup water
1 cup chicken stock
2 tbs oyster sauce
1 tbs white pepper
A pinch of salt

Method:
For the gravy
Heat the oil in a pan and saute garlic till golden brown. Add chicken and prawn. Pour the chicken stock, white pepper, oyster sauce and carrot. Wait until it is boiling and add in vegetables and corn flour. *make sure you mix corn starch with 1/2 cup of water first* Add a pinch of salt.

For kuey teow
Stir the eggs. Heat the oil, then fried the eggs with kuey teow untill a bit crisp. *make sure the pan is really hot or else the kuey teow will stick to the pan*
Approximately: 100gm kuey teow = 1 eggs

Moist Chocolate Cake



Recipe: Mat Gebu


Ingredient A


*1 cup plain flour 
*1 teaspoon baking powder
(mixed together and sifted 3 times)
1 cup soft brown sugar
2 eggs (A)
125gm butter or margarine
1 teaspoon vanilla essence


Ingredient B


1/2 cup cocoa powder
1/2 teaspoon Nescafe
1/4 cup castor sugar
1/2 cup hot water
1/4 cup evaporated milk (I used full cream milk)
-mixed up all together till become chocolate paste-


Chocolate Ganache:


200gm cooking chocolate
150ml whipping cream (or 100ml milk)
1 teaspoon butter


Method:
1. Preheat oven to 175'C.
2. Apply the 8-inch round baking pan with butter and ground basically with parchment paper. Set. aside.
3. Beat butter and brown sugar until fluffy. Add the vanilla essence and eggs one by one.
4. Slow down the speed, add flour alternately with chocolate paste until the end. Mix until blended and smooth.
5. Pour the mixture into the baking pan. Bake in the oven for 45-50 minutes. *I'm using water-bath method*


Chocolate Ganache:
Melt together chocolate and cream UHT by double boiler method. Pour on the cake.
